Delicious Plant Based Pizza

We made the “Long Run Pizza Bread” recipe from Eat & Run, by Scott Jurek, but we bought organic pizza sauce and mixed in about a teaspoon of turmeric to it. We also used pizza crust mix, gluten free, instead of bread. The Tofu “Feta” adds a nice creamy texture to the pizza. It’s made with firm tofu, miso, nutritional yeast flakes and vinegar.

The saltiness in the olives adds nice flavor to the “feta,” which could be a little bland otherwise. Easy, especially if you buy sauce, and satisfying.

This is an older book, but a great one for runners or anyone who wants to eat better and be inspired. I’ll be making more dishes from this book.
